Braised Beef Cheeks

Perfect with a glass of red

Frenchville Sports Club shares their Braised Beef Cheek recipe with Garlic Mash and Red Wine Jus. Perfect for those cooler nights.

INGREDIENTS

Serves 2

Beef Cheek Stock

  • 2 beef cheeks
  • 1 litre water
  • 1 large carrot, chopped
  • 1/2 large brown onion, chopped
  • 2 peeled garlic cloves, whole
  • 4 sprigs of fresh thyme
  • 2 tbsp red wine port reduction or 1/2 glass of red wine

Black Garlic Mashed Potatoes

  • 3 large brushed potatoes, peeled and chopped
  • 10g black garlic paste (can be removed for traditional mashed potato)
  • 40ml cream
  • 40g butter
  • 1 tsp salt and pepper

Caramelised Red Onions

  • 1 Spanish onion, peeled and sliced
  • 2 tbsp caster sugar
  • 60ml red wine vinegar
  • 1/2 cup water

Side vegetables

  • 4 green beans
  • 2 stems broccolini
  • 4 spears asparagus
  • 4 baby carrots, peeled

Red Wine Jus

  • 15g jus lie powder (substitute with gravy powder)
  • 2 tbsp red wine port reduction or 1/2 glass of red wine
  • 3 ladles of Beef Cheek Stock

METHOD

Beef Cheek Stock

  1. Trim excess fat from your beef cheek.
  2. In a large pot, bring water to the boil, add the vegetables and thyme, add red wine port reduction and stir.
  3. Add trimmed beef cheeks and simmer for 1.5 hours on a medium heat. 
  4. Rest for 10 - 15 minutes.

Black Garlic Mashed Potatoes

  1. 30 minutes before beef cheeks are ready, start on your black garlic mashed potato. 
  2. Place your peeled and chopped potatoes in a pot of water. Bring to the boil and simmer until tender. 
  3. Once cooked through, remove from the heat and drain water. 
  4. Add butter, cream and salt and pepper. Mash to a smooth consistency. 
  5. Add black garlic paste and mix through. 
  6. Set aside for plating. 

Caramelised Red Onions

  1. Heat a fry pan, add sliced onions, water, caster sugar and red wine vinegar. 
  2. Simmer until tender and remove from heat. 
  3. Set aside for plating. 

Side Vegetables

  1. Steam vegetables using your preferred technique and cook to your liking. Set aside. 

Put it all together

  1. On the bottom of your bowl, add a large spoonful of Black Garlic Mashed Potato. 
  2. Add your steamed vegetables on top of the mashed potatoes.
  3. Place your beef cheek on top of your vegetables. 
  4. Ladle a generous amount of Red Wine Just over the top. 
  5. Garnish with caramelised onions.
